There is something very special about a warm muffin straight from the oven for breakfast

 

Yes, I can bake if I want to contrary to the jokes I always tell! I can actually bake really fancy stuff if needs be! So if you ever come by my house for dinner, it may sound big headed, but that will be a treat.

 

However, when putting together the recipes for My 90 Day Health and Weight loss programme I have kept the baking down to one bowl, easy to mix recipes that are ready to eat & be stored in minutes.

 

And most of them can be frozen, so even if you live alone, there is no reason not to bake a batch of 12 muffins.

 

Do as I do. Have one for breakfast & individually freeze the rest wrapped in tin foil. Then defrost one at a time over night.

 

This stops you from eating 3-4 a day. Well you might not, but I do.

 

I am very much if it is there I will eat it.

 

To follow the recipes you will need

 

  • Two mixing bowls
  • Wooden Spoon
  • Whisk
  • Baking Sheets
  • Greaseproof paper
  • Silicon muffin moulds, silicon loaf pan & a silicon brownie tray

 

 

If you are baking with almond & coconut flour they tend to bake quicker & catch quicker than normal flours. Do not worry recipes come with full instructions, temperature guides and cooking times.

 

They also tend to be drier flours so often extra liquid ingredients are added such as almond or coconut milk, homemade apple sauce and coconut oil.

 

Everything has been calculated for you so you can eat the prescribed amounts with surety that they are part of your plan & will help you achieve your goals.

 

In addition to the essential cooking equipment. I would also recommend a

 

  • Food processor
  • An electric whisk
  • A high powered blender
  • A juicer

 

This will mean you can speed up the preparation time and batch cook more easily.

 

Although I love home-cooked foods and enjoy a baking day. I do not want to be a slave to my kitchen. So speed is of the essence.

 

This is why I also love my freezer. One Sunday afternoon of baking can last a month.

 

I don’t want you to worry if you have just seen a couple of flours that you have never heard of before & never used.

 

They are available in most health food shops. I prefer to buy mine on-line from Amazon as that way I can reduce the cost, they are not cheap flours I am not going to lie to you. Amazon sell them in 1kg bags & if you subscribe you get a further discount and free delivery.

 

Anyway hopefully you are feeling relieved. Using my programme does not mean forgoing cookies and cakes, just learning to moderate them & bake them using new ingredients.

 

And one of the health advantages to almond and coconut flour is not only the good fats they contain, but they also have higher protein profiles than regular flour.
